Pesto Tuna, Zucchini & Mushroom Omelette

I’ve always loved omelettes (my obsession really began while travelling in Nepal back in January 2024), but this recipe is a brand new creation I put together just last week. It’s quick, simple, and absolutely packed with flavour and nutrition ~ the kind of meal that works just as well for breakfast as it does for a speedy lunch or dinner.

This Pesto Tuna, Zucchini & Mushroom Omelette is creamy, satisfying, and nutrient-dense. The combination of tender zucchini and mushrooms, rich tuna, and the fresh punch of basil pesto makes it a winner. Top it off with melty cheese and fresh parsley, and you’ve got a wholesome meal on the table in under 10 minutes.

Ingredients (Serves 1)

  • ½ medium zucchini, thinly sliced

  • 70 g button mushrooms, thinly sliced

  • ½ tbsp basil pesto (or you can swap for red pesto if you like!)

  • 95 g tuna in spring water, drained

  • 3 eggs

  • 20 g tasty cheese, grated

  • 1 tbsp parsley, chopped

  • 1 tsp olive oil

  • Pinch of salt

Method

  1. Prepare the filling: Heat olive oil in a non-stick frying pan over medium heat. Add zucchini and mushrooms, sauté for 3–4 minutes until softened. Remove from the pan, then stir through the pesto and tuna.

  2. Make the omelette: In a small bowl, whisk eggs with a pinch of salt until well combined. Pour into the same pan over medium heat, tilting so the egg spreads evenly.

  3. Fill and fold: Once the eggs are half set, spoon the zucchini, mushroom, pesto, and tuna mixture over one half of the omelette. Sprinkle with cheese.

  4. Finish cooking: Fold the omelette over the filling and cook for 1–2 minutes more, until the cheese has melted and the centre is hot.

  5. Serve: Slide onto a plate and top with fresh parsley before serving.
